How to Make

  • Pre- heat a medium-sized saucepan
  • Add olive oil, then garlic and onion, sauté till golden brown.
  • Add the carrots, leeks, celery sticks and sauté for a few minutes.
  • Add the water, bay leaves and lentil and bring to boil Cover with aluminum foil and simmer for 15-20 mins or until the lentils are cooked.
  • Place the cooked lentil on a plate or bowl, top it with Rocca, walnuts, and feta cheese.
  • Squeeze the lemon wedges on top of the salad.
