How to Make

  • Preheat oven to 180°C and line baking sheet with parchment paper.
  • In a large stand mixer bowl mix sugar, butter and vanilla essence on medium speed until mixture is smooth. Add egg yolks, beat to combine. Add almond flour and salt, mix well until the mixture forms a soft dough consistency.
  • Roll dough into 1 inch balls and place on baking sheet lined about 2 inches apart. Using your thumb to make an indent in the center of each cookie. Pinch together any large cracks around the sides of each cookie. Fill the indent with 1/2 teaspoon of jam.
  • Bake cookies for about 10 minutes. Once done, remove from oven and allow to cool.
