How to Make

  • With a hand blender or a food processor, mix all of the batter ingredients thoroughly then chill for 24 hours and rest.
  • Remove the batter from the refrigerator and preheat the oven to 180 degrees Celsius.
  • Rub the dish/tray all around the inside with the soft butter and then evenly sprinkle over the sugar so it sticks to the butter. Place the cherries over the bottom of the baking dish and carefully pour the batter over the top making sure that the cherries are evenly spaced apart.
  • To cook:Place in the oven for around 30/40 minutes until the batter rises and becomes golden and crispy.
  • To serve:Remove and rest for a few minutes, then dusting with icing sugar just before serving.
