Preheat the oven to 175 °C and line a 8 x 8 inch square pan with parchment paper and set aside.
In a saucepan on medium heat, melt the butter and brown sugar. Once the butter has melted set aside and mix in vanilla and salt.
Once this mixture has cooled slightly about 5 mins, add in the eggs one and a time and stir with a whisk until combined.
In another bowl sieve the all purpose flour and baking powder, whisk and set aside.
Add the dry ingredients to the wet ingredients and fold them until just combined.
Stir in the chopped freeze dried strawberries (or the Strawberry Jam if freeze dried strawberries is not available) and white chocolate to the batter and pour it into the prepared pan.
Note: As an alternative to Freeze Dried Strawberries if unavailable in your store, you can use the same quantity of a Strawberry / Any Other Berry Jam
