How to Make

  • Peel and quarter the onion,peel the garlic and cut up the bell pepper, tomato, carrot into large pieces.
  • To make this very quickly without compromising on any flavor, blitz each vegetable separately in a food processor until they are roughly chopped.
  • In a large pot, add the olive oil and begin cooking the onion, then gradually add the garlic, carrot, bell pepper and cook.
  • Then add the minced beef and continue cooking until it browns.
  • Add the chopped tomatoes, then the canned tomatoes, then the tomato paste and finally the cup of water.
  • Season with the salt, pepper, oregano, thyme, vinegar, brown sugar and chili (if using)
  • Being to a boil and then simmer for 20 minutes.
  • In the meantime cook your pasta with salt (no oil hete). Do not overcook, make sure they still have a little crisp to them.
  • When your pasta is cooked, add it to the sauce, and up to 1 cup of the strachy pasta water.
  • Mix well and serve with the fresh basil leaves and shredded parmesan cheese.
