How to Make

  • Place a large pot on high heat, when the pot is hot, add the butter and oil, then add the onions and sauté for 5-7 min, add the carrots and celery and sauté for another 7 min. Make a space in the pot and add the tomato paste. Let the tomato paste cook on the surface of the pot for 2 min before mixing it in the vegetables for a couple of minutes.
  • Add the crushed garlic cloves and cook for 2 min followed by the beef mince. Season with salt and pepper and the oregano. Once the meat had browned add the red wine or stock and simmer on low heat until the wine has reduced.
  • Meanwhile chop the plum tomatoes (reserving their juices) and add them to the pot. Add the thyme leaves, bay leaf, Worcester sauce and milk. Cover and simmer on low heat for 1 hour. (If you feel that the juices are reducing too quickly, you can add a little bit of pasta water
  • Serve with pasta and garnish with grated parmesan and fresh basil.
