In a medium size bowl combine the butter, sugar and honey and mix well until completely mixed and fluffy.
Add the egg and mix until completely mixed.
In another bowl mix the flour with the salt, baking soda and all the spices.
Add the flour mixture to the butter mixture and mix using a wooden spoon until a soft dough forms.
Wrap the dough with plastic wrap and refrigerate for two hours up to two days.
Heat the oven to 180C and line baking trays with parchment paper.
Take the dough out of the fridge and roll to medium thickness and cut using the desired shape.
Bake for 8-10 minutes.
Cool on a wire rack completely then serve.
