Mix the flour with the salt, baking powder and thyme.
Using a mixer (or by hand) slowly incorporate the cubed butter.
Chill for 20 minutes then roll out into a disk (on baking paper) and chill again
In the meantime, chop the almonds, slice the dates and the cheese
Take the dough out and top it with the cheese, almonds, and dates
Then add the egg, give it a final mix and you’re good.
Close it up from the sides and sprinkle olive oil and salt
Bake for 35-40 minutes at 180 degrees
Halfway through you can cover the middle part with some foil so that the toppings don’t become too crispy
After baking, drizzle the balsamic honey mix and enjoy
