How to Make

  • Preheat oven to 180°C. Line a baking dish with baking paper and set aside.
  • Cut the zucchinis in half and gently scoop out a bit of the inside.
  • Arrange zucchini halves, cut side up, on the baking sheet. Set aside
  • Mix together the breadcrumbs, parmesan cheese, butter, salt, pepper, parsley and garlic in a bowl
  • Spoon the mixture into he scooped out center of each zucchini half.
  • Bake for 20 minutes in the oven until the crust is golden and the zucchini halves are cooked.
  • Broil for a further 5 minutes on medium heat to crisp the topping.
  • Serve as a side accompaniment to any main dish or a snack with a cream cheese dip.
