Line a baking tray with parchment paper/foil and grease.
Place oats in the tray and roast at 180°C for 5 minutes. Then using a spatula give the oats a toss and roast for 3 more minutes. Throw the oats in a large bowl and set aside.
In a saucepan over medium heat mix honey, butter, sugar, salt and vanilla till fully dissolved.
Add the honey mixture to the oats and mix well using spatula. Let it cool for couple if minutes.
Add in chocolate chips and cranberries and mix well.
Transfer the mixture to tray and flatten using spatula.
Refrigerate for 2 hours (till almost fully hardened). You can cover the tray with foil for better results.
