How to Make

  • Into a microwave safe bowl add broccoli florettes, frozen corn and peas and cover in water and add a pinch of salt. Microwave on high for 3 mins. Careful drain the water, run under cold water and set aside.
  • In a food processor, add the slices of bread and pulse to form a bread crumb like consistency. To this add in the millet, the cooked and cooled broccoli, peas and corn. Pulse a few times until it forms a course texture.
  • Now add in all the spices, salt, and fresh coriander into the food processor, using a spatula scrape down the sides of the jar so all the ingredients are incorporated. Finally add in the oat flour and mix by hand.
  • The mixture should not be too wet and should come together when pressed by hand. If the mixture is still wet, add another tbsp of oat flour. Divide the mixture into 8 equal size patties and flatten slightly. This step is done by hand and you can wet your palm with water as you form the patties so that the ingredients don't stick to you hand.
  • Once the patties are formed place them on a lined dish and set in the freezer for atleast 15 mins. The patties can also be prepared well in advance and frozen and only fried up before eating.
  • To fry the patties, defrost the patties for a few minute in the microwave so the insides are warm. Then shallow fry the patties until they are golden brown on both sides. It should take about 2-3 minutes on each side.
  • To make your burgers, slice up the buns and place some torn lettuce, top with the patty, add a slice of onion, tomato, a relish of choice like mustard, mayo and a side of ketchup. We kept it simple because the broccoli, corn, peas and millet really are the stars of this recipe.
