How to Make
Slice the aubergine into slits but don't cut all the way to the end.
Cut off a thin slice "underneath" so the aubergine can "sit" flat on a bed of chopped onions in a baking dish or in your air fryer
Stuff the slits with tomato slices that you have seasoned well after slicing, and then find space for some sticks of rosemary, pop them in.
Drizzle generously with your favourite olive oil, Then sprinkle with salt, pepper, chilli flakes, some more oil and bake in your oven or air fryer till the pulp is soft and cooked through.
Fabulous as a side to any meat dishes or crumble over some feta cheese just before you take out of the oven for a complete vegetarian meal.
